1 1/2 cups plus 1 tablespoon cake flour
3 tbsp pure cane sugar
1 tbsp baking powder
1/4 tsp salt
1 1/2 cups evaporated milk (more if needed)
1 lemon, zested and juiced
2 tbsp melted butter
1 1/2 tsp vanilla extract
1 large egg
1 cup blueberries
In a medium bowl, mix the flour, sugar, baking powder and salt. The set aside.
In a separate bowl, mix the evaporated milk, lemon zest and juice. Allow to sit for 5 minutes, then add the egg and vanilla. Mix to combine.
Combine Both mixtures and stir gently. Then stir in the melted butter and blueberries. If mixture is still too thick , you can drop in a little more evaporated milk.
Grill over medium heat until both sides are golden brown and serve with butter and warm syrup.
We always make them from scratch BUT you can also always go the easy route too and simply buy pancake mix, add the blueberries, lemon zest and 1 tsp. vanilla extract.
Serve with warm syrup and butter.
