Cauliflower is one of those veggies I would always seem to forget about. Not on purpose. Just never purchased it when I would go shopping. Would never really order it if we were dining out. Come to think of it, not too many places even offer cauliflower as a side option. The only time I would ever really eat it was when my mom made it with her famous cheese sauce. Anyway, here is another recipe I swiped from my mom and can we say ADDICTIVE?! I am now making this at least 3 times a week. My kids love it too! The key is to let it cook long enough so most of the florets having this light brown coating. Trust me , this makes a difference! Try this and I can assure you , it will be a hit! Oh ..and inexpensive to make and super easy!

1 Head of Cauliflower
1- 1 1/2 tbsp. Olive Oil
Salt or Sea Salt ( I prefer sea salt)
Parmesan cheese (I used Locatelli Romano)
Cut Cauliflower up into small florets and place on small cookie sheet.
Drizzle olive oil over cauliflower , then season to taste with sea salt and pepper.
Top with parmesan cheese
Bake at 350 degrees for approximatelty 15 minutes or until florets are just browning and have that slight crunchy texture.
I have even made this a meal for myself and once cooked, I will sprinkle a little more parmesan cheese on top and eat. We all know it’s not pasta but for someone trying to cut back on carbs , I think this is a must try! 🙂
